WUGAR is a semi-washed version of DRUGAR, which is a type of natural processing method where farmers dry unsorted cherry on the ground in the limited spaces available to them. In WUGAR, the coffee cherries are pulped using a rudimentary pulping machine, after which the mucilage is left intact as the beans are dried on raised beds or patios. The beans are then hand-sorted to remove any defective or discolored beans, and the remaining parchment is milled to reveal the green coffee beans.
